Today was just another Manic Monday. I know I don’t start work until nine, but noon sure arrived really quickly. Followed rapidly by three p.m.. Then five. Seven. Eight. Now it’s ten. Amazing how that happens, like, every day, like, you know?
I’ve been counting calories today. Counting my hot chocolate, the two bites of chocolate Liz gave me, and the chocolate chip cookie that AM2 insisted I eat, I think I ended up somewhere around 1600. That’s not too bad for a day. TLG wanted me between 1500 and 1800 on days when I don’t work out. Now, I don’t she had so much chocolate in mind, but I didn’t, either. So I’d say I did okay. I’m cooking ravioli right now for tomorrow’s lunch, but I have the horrid feeling it’s freezer-burned. I think this is the package I accidentally left out on top of the freezer for a day. But it’s only cheese, so it’s not like it went bad. Hmm. Have to see what it looks like when it’s done cooking.
So I was cooking this pasta, but it looked kinda funny in the pot, so I threw it out. Now I’m making broccoli & cheese rice (such a weakness!) and salmon. Given the way my oven cooks, I should be ready to go to bed around twelve-thirty. *sigh*
I’ll have to get up early enough tomorrow to have some eggs for breakfast. Mmm, I miss Dad’s Eggs, and I had them just last weekend. Eggs, a bit of Miracle Whip, some cheddar cheese… SOOO good. And I got out another slice of my meat pie, and it’s defrosting in the fridge. That will be lunch or dinner tomorrow. And I’m cooking both pieces of salmon, and I’ll only eat one tomorrow… Some for Wednesday. I need some veggies, but I’ll do a bit of grocery shopping tomorrow between work and meeting with TLG.
